Eljap is a specialist in candied ginger, in particular the stem ginger found on the Fi-Ji Islands. The quality of Fi-Ji ginger is excellent. It is harvested as a young plant and is therefore called stem ginger.Fi-Ji candied stem ginger is known for its mild flavour and soft texture.

Ginger in syrup
and crystallised ginger

Apart from the available dimensions, candied ginger is generally subdivided into two product groups:

  1. Ginger in syrup (wet)
  2. Crystallised ginger (dry)

1. Ginger in syrup
This ginger has a standard syrup content of 10%. After draining the ginger, it contains no more than 5% syrup. We can further reduce this percentage, as well as the water activity (Aw level).

2. Crystallised ginger
Crystallised ginger is dried ginger where its sugar has formed crystals. Its open structure allows easy processing or mixing into melanges. We offer two types of crystallised ginger: the Import crystallised ginger produced in Fi-Ji and the mild ‘Soft Quality’ ginger.

The Soft Quality crystallised ginger is one of Eljap’s in-house products. It has a soft, smooth and sweet flavour. It is a delicious sweet that tastes perfect with a cup of coffee, and makes a great snack or even an after dinner treat. After all, ginger is good for digestion. Crystallised ginger and chocolate also make a good match.

From size 1-5 mm, we can offer you ginger both in syrup and as crystallised ginger.

Ginger dimensions
Candied ginger is imported ready-to-eat and according to specifications. The ginger dimensions vary from pulp < 3 mm to 16-19 mm. The varieties are listed below:

Smaller dimensions
Smaller dimensions are generally used in the Industry. The versatility of ginger is infinite, because it combines well with very many other standard products, such as pastries, chocolate, fish, meat, sauces and dairy products.
